Lemon Bars

These tangy lemon bars are the ultimate treat. They have a simple shortbread crust, fresh lemon curd, and a dusting of powdered sugar.

Ingredients

Shortbread Crust

  • 1 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • cups all-purpose flour

Lemon Filling

  • 2 cups granulated sugar
  • 1/2 cup all purpose flour
  • 6 large eggs
  • 2 tablespoons lemon zest
  • 3/4 cup fresh lemon juice
  • 2 tablespoons powdered sugar
