  • 1 small onion
  • 2 pickled cucumbers
  • 1/2 cup green peas (fresh or frozen)
  • 1/4 cup vegetable oil (plus extra for coating beets)
  • 1 tablespoon vinegar (white wine vinegar or apple cider vinegar works well)
  • 1 teaspoon mustard
  • 1 teaspoon salt (adjust to taste)
  • 1 teaspoon sugar
  • 1/4 teaspoon ground black pepper (optional)
