Kinda can’t stop thinking about this dish. You’ve gotta try it.

We’ve all been there, craving something fresh and zesty but strapped for time. Shrimp scampi is a classic dish that brings you the flavors of coastal Italian cuisine right to your Midwestern home. Usually a quick stovetop affair, I’ve put a twist on tradition for us busy bees. This slow cooker version is perfect for setting up before work and coming home to a dinner that’s almost ready to plate. Perfect for when you want that fancy-ish dinner without the fuss, this lemon garlic shrimp scampi will whisk your senses away to a seaside escape—even if you’re just looking out at your backyard.
Shrimp scampi loves to be the star next to a supporting cast of simple pasta like angel hair or linguine. Or, if you’re keeping it low-carb, try it over zucchini noodles or cauliflower rice. It’s great with a crisp salad on the side or some steamed veggies to soak up all that garlicky, lemony goodness!
