Slow Cooker Beef Ragu
Servings: 6-8
Ingredients
– 2 pounds beef chuck roast, cut into chunks
– Salt and freshly ground black pepper, to taste
– 2 tablespoons olive oil
– 1 medium onion, finely chopped
– 3 cloves garlic, minced
– 1 carrot, finely chopped
– 1 celery stalk, finely chopped
– 1/4 cup tomato paste
– 1 cup dry red wine
– 28 ounces canned crushed tomatoes
– 3 sprigs fresh thyme
– 2 bay leaves
– 1/2 cup beef broth, or as needed
– Grated Parmesan cheese, for garnish
– Chopped fresh parsley, for garnish
