Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 180°C (350°F). Grease or line individual ramekins or muffin tins.
  2. Prepare the Batter:
    • In a mixing bowl, beat the eggs with sugar and a pinch of salt using a hand mixer until pale and creamy.
    • Pour in the kefir (or buttermilk) and melted butter, and mix until well combined.
  3. Add Dry Ingredients:
    • Sift the flour and baking powder into the bowl with the wet ingredients.
    • Mix gently until you get a smooth and thick batter.
  4. Fill the Cups:
    • Spoon the batter into the prepared cups, filling them halfway.
  5. Add Apples:
    • Distribute the chopped apples evenly over the batter in each cup.
  6. Bake:
    • Place the filled cups in the preheated oven.
    • Bake at 180°C (350°F) for 35-40 minutes, or until the pies are golden brown and a toothpick inserted into the center comes out clean.
  7. Serve:
    • Remove the pies from the oven and let them cool slightly in the ramekins or muffin tins.
    • Once cooled, carefully remove them from the molds.
    • Dust the tops of the pies with powdered sugar before serving.
