A patient of mine told me about this recipe, so I had to make it!


Instructions:

1. Prepare for Frying:

  • Place cooling racks over baking sheets lined with wax paper and set them aside.

2. Make the Fritter Batter:

  • In a medium bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  • Create a well in the center, and add milk, eggs, and applesauce. Stir gently until just combined.
  • Fold in the diced apples.

3. Heat the Oil:

  • Heat 1 1/2 – 2 inches of canola oil in a heavy cast iron skillet, Dutch oven, or deep fryer to 375°F (190°C).

4. Fry the Fritters:

  • Drop about 1/4 cup of batter per fritter into the hot oil, spreading it out slightly as you drop it in.
  • Fry each fritter for about 2 minutes per side until golden brown.
  • Remove the fritters and drain them on paper towels.

5. Make the Glaze:

  • In a large bowl, whisk together confectioners’ sugar, milk, and vanilla until smooth.

6. Glaze the Fritters:

  • Dunk each fritter into the glaze, turning it over to coat both sides.
  • Place the fritters on the wire racks to air dry and let the glaze drip off.

Tips for Perfect Apple Fritters:

  • Oil Temperature: Make sure the oil is at 375°F before frying to avoid greasy fritters.
  • Apple Variety: Granny Smith or Honey Crisp apples work best for a balance of sweetness and tartness.
  • Glaze: If the glaze is too thick, add a bit more milk to reach the desired consistency.
