Classic Coffee Cake with Crumb Topping


Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour an 8×8-inch (20x20cm) baking dish or line it with parchment paper.
  2. Make the Crumb Topping:
    • In a small bowl, mix together brown sugar, flour, and cinnamon.
    • Stir in melted butter until the mixture resembles coarse crumbs. Set aside.
  3. Prepare the Cake Batter:
    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract.
    • In another bowl, whisk together flour, baking powder, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, alternating with sour cream and milk. Begin and end with the dry ingredients. Mix until just combined.
  4. Assemble the Cake:
    • Pour the batter into the prepared baking dish, spreading it evenly.
    • Sprinkle the crumb topping over the batter, ensuring it covers the entire surface.
  5. Bake the Cake:
    • Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  6. Add the Glaze (Optional):
    • In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth.
    • Drizzle the glaze over the cooled cake.
  7. Serve:
    • Slice the cake into squares and enjoy with a hot cup of coffee!

  • For extra flavor, you can add a handful of chopped nuts (walnuts or pecans) to the crumb topping.
