3. Alfajores (Bottom Left)
Ingredients
• Butter – 1 cup (250g)
• Powdered sugar – ¾ cup (90g)
• Egg yolks – 2
• Vanilla extract – 1 tsp
• All-purpose flour – 1½ cups (190g)
• Cornstarch – 1 cup (125g)
• Baking powder – 1 tsp
Filling
• Dulce de leche or thick caramel – 1 cup (250g)
• Desiccated coconut – ½ cup (50g)
Preparation
Cream butter and sugar, add yolks and vanilla. Mix flour, cornstarch, and baking powder, then combine into a soft dough. Roll out and cut circles. Bake at 160°C for 10–12 minutes. When cool, sandwich with caramel and roll edges in coconut.
4. Jam-Filled Butter Cookies (Bottom Right)
Ingredients
• Butter – 1 cup (250g)
• Powdered sugar – ¾ cup (90g)
• Egg yolk – 1
• Vanilla extract – 1 tsp
• All-purpose flour – 2 cups (250g)
• Cornstarch – ¼ cup (30g)
• Strawberry or raspberry jam – ½ cup (125g)
Preparation
Cream butter and sugar until smooth. Add yolk and vanilla. Sift in flour and cornstarch; mix to form soft dough. Roll out and cut round shapes; cut a hole in half for the tops. Bake at 170°C for 10–12 minutes. Cool and sandwich with jam.
