Copycat Pasta Fagioli Soup Recipe

Instructions:

    1. Brown the Ground Beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off excess grease.
    2. Sauté the Vegetables: Add onion, carrots, and celery to the pot. Cook until softened, about 5-6 minutes. Stir in minced garlic and cook for 1 more minute.

  1. Combine Ingredients: Add diced tomatoes, tomato sauce, beef broth, kidney beans, cannellini beans, basil, oregano, thyme, rosemary, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  2. Cook the Pasta: Cook ditalini pasta according to package instructions. Drain.
  3. Finish the Soup: Add cooked pasta and optional spinach to the soup. Simmer for 2-3 minutes, or until spinach is wilted.
  4. Serve: Ladle soup into bowls and top with grated Parmesan cheese.
