Grandma’s Viennese cardinal slices are easy to prepare!

Preparation:

1. For the first mass, simply beat 5 egg whites into very stiff snow, mix with sugar and then stir into a solid snow mass.
2. For the 2nd mixture: Mix 5 egg yolks, 2 eggs, powdered sugar, flour into a loose sponge cake mixture.
3. Next, spread alternating white and then yellow stripes from both mixtures next to each other on a baking tray lined with baking paper or pipe them with a piping nozzle and then bake in a preheated oven at 170 degrees for approx. 30 minutes.
4. After cooling, the paper is removed and the pastry strips are carefully cut through.
Spread them thickly with apricot jam and then top with a mixture of whipped cream flavored with instant coffee and vanilla sugar.
