Grilled Lobster Tails with Lemon Herb Butter

Preheat the Grill:

Preheat your grill to medium-high heat.
Prepare the Lobster Tails:

Using kitchen shears, cut the lobster tails lengthwise through the top shell and flesh, stopping at the tail.
Make Lemon Herb Butter:

In a bowl, mix together the softened butter, lemon zest, chopped parsley, chopped chives, minced garlic, salt, and pepper until well combined.
Butter the Lobster Tails:

Spread the lemon herb butter evenly over the flesh of each lobster tail.
Grill the Lobster Tails:

Place the lobster tails on the grill, flesh side down. Grill for 5-6 minutes, until the flesh is opaque and cooked through, and the shells are lightly charred.
Carefully flip the lobster tails and grill for another 3-4 minutes, until the shells are fully charred and the lobster meat is tender.
