Growing up, this was my favorite. I’d constantly pester my mom to cook it.

Instructions:

  1. Preheat Oven: Set to 350°F (175°C).
  2. Caramelize Onions: In a large skillet, heat the butter and olive oil over medium heat. Add the thinly sliced onions and sugar. Cook, stirring occasionally, for 15-20 minutes, until the onions are golden brown and caramelized.
  3. Prepare Rice: While the onions caramelize, spread the uncooked rice evenly in a greased 9×13-inch baking dish.
  4. Make the Broth Mixture: Add beef broth, salt, and pepper to the caramelized onions in the skillet. Stir to combine and bring to a simmer.
  5. Assemble: Pour the onion and broth mixture over the rice in the baking dish, ensuring the rice is evenly covered. Cover with aluminum foil.
  6. Bake: Place in the oven and bake for 30 minutes.
  7. Add Cheese: After 30 minutes, remove the foil and sprinkle the shredded Gruyère cheese over the top. Return to the oven, uncovered, and bake for an additional 15 minutes until the cheese is melted and bubbly.
  8. Serve: Let the dish sit for a few minutes to allow the flavors to meld before serving.

Variations & Tips:

  • Vegetarian Version: Substitute vegetable broth for beef broth and add sautéed mushrooms for an earthy, meaty flavor without the meat.
  • Crunchy Topping: For an extra bit of texture, top with crispy fried onions just before serving.
  • Cheese Options: If you don’t have Gruyère, you can use Swiss or even sharp cheddar for a different twist.
  • Extra Veggies: You can also add some sautéed spinach or bell peppers to give the dish a boost of color and flavor.

Serving Suggestions:

  • Pair with a fresh green salad dressed with a tangy vinaigrette to balance the richness of the dish.
  • For a heartier meal, serve alongside roasted chicken or grilled pork chops.
  • Don’t forget some crusty homemade bread to soak up the delicious broth!
  • A glass of iced tea or a light white wine like Sauvignon Blanc would be perfect to complement the flavors.

It’s no wonder this was your favorite growing up! The caramelized onions give it that rich, savory depth, while the cheese creates that melty, comforting topping. It’s a dish that’s perfect for cold nights and even better when shared with loved ones around the table.
