Hands down, our favorite dinner to eat during the fall!

Directions:

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, scatter the sweet potatoes, red onion, Brussels sprouts, and apple slices.
  3. Drizzle the olive oil over the veggies and apples, then sprinkle with thyme, rosemary, garlic powder, salt, and pepper. Toss everything to coat evenly.
  4. Add the sliced chicken apple sausage to the pan, arranging it evenly among the veggies and apples.
  5. Roast for 25-30 minutes, or until the veggies are tender and the sausage is browned. Halfway through, stir everything to ensure even cooking.
  6. Serve hot, straight from the pan!

Variations & Tips:

  • Feel free to mix and match the veggies based on what you have. Butternut squash, carrots, or parsnips would all make great additions.
  • If you prefer a different type of sausage, turkey or pork sausages work just as well.
  • For a touch of sweetness, drizzle a little maple syrup over everything before roasting.
  • For those who like a bit of heat, a sprinkle of red pepper flakes will add a nice kick.
