Instructions:

  1. Prepare the Filling:
    • Boil the potatoes in salted water until tender. Drain and mash them with butter and a little milk until smooth.
    • In a frying pan, heat a small amount of vegetable oil over medium heat. Add chopped onion and sauté until translucent.
    • Add grated carrot and cook until softened.
    • Stir in grated pickled cucumbers and cook until excess liquid evaporates.
    • Season with salt and pepper to taste. Remove from heat and let the mixture cool.
  2. Make the Dough:
    • In a deep bowl, pour kefir and stir in baking soda. Let it sit for a few minutes until slightly bubbly.
    • Add vegetable oil, egg, and salt to the kefir mixture. Mix well until smooth.
    • Gradually add flour, stirring with a spoon or spatula until the dough comes together.
    • Knead the dough on a lightly floured surface for about 5-7 minutes until it’s smooth and slightly sticky. Add more flour if needed, but the dough should remain soft.
  3. Assemble and Cook the Flatbreads:
    • Divide the dough into 8 equal portions. Roll each portion into a ball.
    • On a lightly floured surface, roll out each ball into a thin round flatbread (about 6-7 inches in diameter).
    • Place a generous spoonful of the cooled filling in the center of each flatbread round. Fold the edges of the dough over the filling, pinching to seal and forming a stuffed flatbread.
  4. Fry the Flatbreads:
    • Heat a frying pan over medium heat and add a little vegetable oil.
    • Place the stuffed flatbreads in the pan, seam side down. Cook covered for about 3-4 minutes, until golden brown on the bottom.
    • Flip the flatbreads and cook the other side for another 3-4 minutes, until golden brown and cooked through.
    • Repeat with the remaining flatbreads, adding more oil to the pan as needed.
  5. Serve:
    • Once cooked, remove the flatbreads from the pan and place them on a plate.
    • Optionally, brush the hot flatbreads with melted butter and sprinkle with a pinch of salt.
    • Serve the flatbreads warm. They are delicious on their own or with a side of yogurt or sour cream.
