Instructions:
Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
In a bowl, lightly whisk 1 egg, 1 egg yolk, a pinch of salt, and 90 g of sugar until smooth.
Gradually pour in 100 ml of neutral vegetable oil, mixing well. Add a few drops of almond essence if desired.
In another bowl, mix 250 g of all-purpose flour with 1 tsp of baking powder.
Gradually add the flour mixture to the wet ingredients, mixing thoroughly with a whisk until a dough forms.
Knead the dough with your hands until it becomes elastic and does not stick to your hands.
Divide the dough into 4 equal parts. Roll each part into a long rope, then cut it into pieces approximately 6.5-7 cm long and 2.7 cm wide.
Place the resulting 16 pieces on the prepared baking sheet, spaced apart.
Bake in the preheated oven for 15 minutes or until the cookies are lightly golden brown.
Remove from the oven and allow to cool. Once cooled, sprinkle the cookies with powdered sugar.
