Directions:
- Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
- In a small bowl, mix together the cream cheese, crumbled bacon, shredded cheddar, onion powder, and garlic powder until well combined.
- Carefully slice each chicken breast horizontally to create a pocket (be sure not to cut all the way through).
- Stuff each chicken breast with the cream cheese mixture, and secure with toothpicks if needed.
- Season the outside of the chicken breasts with salt and pepper.
- Place the crushed Doritos in a shallow dish. Brush each stuffed chicken breast with olive oil, then press into the Doritos crumbs to coat. Optionally, top with additional chopped bacon for extra flavor.
- Place the chicken on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden and crispy.
- Let the chicken rest for a few minutes before serving.
Variations & Tips:
Feel free to get creative! You can swap the Doritos for other chips or try turkey bacon for a lighter alternative. For extra spice, add chopped jalapeños to the cream cheese stuffing, or opt for a spicy Doritos flavor. Not a fan of cream cheese? Ricotta or goat cheese would also make delicious alternatives.
