I’m pretty sure I could live on this stuff. It’s insanely good!

Directions:

  1. Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.
  2. In a small bowl, mix together the cream cheese, crumbled bacon, shredded cheddar, onion powder, and garlic powder until well combined.
  3. Carefully slice each chicken breast horizontally to create a pocket (be sure not to cut all the way through).
  4. Stuff each chicken breast with the cream cheese mixture, and secure with toothpicks if needed.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Place the crushed Doritos in a shallow dish. Brush each stuffed chicken breast with olive oil, then press into the Doritos crumbs to coat. Optionally, top with additional chopped bacon for extra flavor.
  7. Place the chicken on the prepared baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the crust is golden and crispy.
  8. Let the chicken rest for a few minutes before serving.

Variations & Tips:
Feel free to get creative! You can swap the Doritos for other chips or try turkey bacon for a lighter alternative. For extra spice, add chopped jalapeños to the cream cheese stuffing, or opt for a spicy Doritos flavor. Not a fan of cream cheese? Ricotta or goat cheese would also make delicious alternatives.
