- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- 1 cup rolled oats
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins (optional)
