Lemon cookie

Cookies
Preheat the oven to 180°C/160 fan and line 2-3 large pieces with baking paper.
Add unsalted butter and icing sugar to a large bowl and beat well until combined.
Add flour, baking powder, salt, lemon zest and egg and beat until the cookie dough becomes smooth.
Using a measuring spoon, place the cookie dough on the indicated line and shape each piece of cookie dough into a round ball.
Bake the cookies in the oven for 12-15 minutes or until golden brown and crisp.
Let it cool completely.
Decorations
When the cookies have cooled, add powdered sugar to the bowl.
Add lemon juice, tablespoon by tablespoon, until you achieve a smooth consistency.
Dip each cookie into the mixing bowl, wipe away any drippings, and place back on the baking sheet.
A pinch of lemon zest if you want! Being happy.

These cookies can be stored at room temperature for more than 7 days.
I use fresh lemon, but if you cannot use fresh lemon, you can use 1-2 teaspoons of lemon juice in the cookie dough.
These cookies are valid for more than 3 months.
