Smoked Turkey Legs Recipe
Ingredients:
- 4 large turkey legs
- 1 gallon water
- 1/2 cup kosher salt
- 1/4 cup sugar (white or brown)
- 1 tablespoon black peppercorns
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon paprika (optional, for extra smokiness)
- 1 teaspoon curing salt (Prague powder or pink curing salt) – this gives the legs that “ham-like” pink color and preserves the meat
- 2 tablespoons olive oil
- Wood chips (hickory, apple, or oak) for smoking
