Parmesan Garlic Baked Potatoes

Preheat oven to 400°F (200°C).
Cut the potatoes into long, thin French fry shapes.
In a large bowl, combine the potatoes, olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss well to coat.
Spread the potatoes in an even layer on a baking sheet and bake for 30 minutes, flipping halfway through.
Sprinkle the fries with parsley flakes and the grated Parmesan. Toss to coat and bake for an additional 10-15 minutes until crispy.
