Recipe from our childhood: tender crumbly shortbread cookies with mayonnaise

Cooking process:

  1. In a food processor, pulse the cold butter and flour together until fine crumbs form.
  2. Add the eggs, mayonnaise, baking powder, vanilla extract, and refined sugar to the mixture. Knead the dough thoroughly until it is soft and pliable.
  3. Cover the dough with plastic wrap and refrigerate for half an hour to firm up.
  4. Preheat the oven to 180 degrees Celsius (about 350 degrees Fahrenheit) and line a baking sheet with parchment paper.
  5. Roll out the chilled dough on a floured surface to your desired thickness. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  6. Bake the cookies in the preheated oven for about 20 minutes, or until they are golden brown.
  7. Once the cookies are done, remove them from the oven and let them cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
  8. Sprinkle the cooled cookies with powdered sugar before serving.
