Directions:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.
- In another bowl, combine the mashed bananas, milk, beaten egg, vanilla extract, and melted butter.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Drop spoonfuls of the batter onto the prepared baking sheet, leaving a little space between each fritter.
- Bake in the preheated oven for 12-15 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
- Allow the fritters to cool slightly on a wire rack before serving.
Variations & Tips:
- For a bit of extra crunch, add a handful of chopped nuts, such as walnuts or pecans, into the batter.
- Substitute half of the all-purpose flour with whole wheat flour for a heartier texture.
- If you’re feeling indulgent, add a handful of chocolate chips for a sweet twist.
- Don’t be afraid to experiment with spices—add a pinch of cloves or allspice for a slightly different flavor profile.
