Spaghetti with Shrimp, Kale, and Burst Tomatoes


Instructions

1. Cook Pasta and Kale

  • In a large pot of boiling salted water, cook the spaghetti until al dente, according to package instructions.
  • Add the kale 2 minutes before the pasta is done cooking.
  • Reserve 1 cup of the pasta water, then drain the pasta and kale.

2. Cook Tomatoes Until Bursting

  • In a large skillet, heat the olive oil over medium heat.
  • Add the red-pepper flakes, garlic, and tomatoes. Season with salt.
  • Cook, stirring occasionally, until the tomatoes begin to burst, about 10 minutes.

3. Season and Cook Shrimp

  • Season the shrimp with salt and arrange them in a single layer on top of the tomatoes.
  • Cover and cook until the shrimp are bright pink and opaque, about 2 minutes.
  • Remove the skillet from heat.

4. Combine Ingredients and Serve

  • Add the pasta and kale to the skillet, along with the butter and 1/2 cup of the reserved pasta water.
  • Toss everything together until the pasta is well coated, adding more pasta water if needed.
  • Serve with grated Parmigiano-Reggiano and extra red-pepper flakes for a little more heat, if desired.
