Instructions
1. Cook Pasta and Kale
- In a large pot of boiling salted water, cook the spaghetti until al dente, according to package instructions.
- Add the kale 2 minutes before the pasta is done cooking.
- Reserve 1 cup of the pasta water, then drain the pasta and kale.
2. Cook Tomatoes Until Bursting
- In a large skillet, heat the olive oil over medium heat.
- Add the red-pepper flakes, garlic, and tomatoes. Season with salt.
- Cook, stirring occasionally, until the tomatoes begin to burst, about 10 minutes.
3. Season and Cook Shrimp
- Season the shrimp with salt and arrange them in a single layer on top of the tomatoes.
- Cover and cook until the shrimp are bright pink and opaque, about 2 minutes.
- Remove the skillet from heat.
4. Combine Ingredients and Serve
- Add the pasta and kale to the skillet, along with the butter and 1/2 cup of the reserved pasta water.
- Toss everything together until the pasta is well coated, adding more pasta water if needed.
- Serve with grated Parmigiano-Reggiano and extra red-pepper flakes for a little more heat, if desired.
