Sshh, don’t tell folks about this recipe! It’s too good, and so easy to make! We like to fix it often

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Sauté the Aromatics: In a skillet, heat the oil over medium heat. Sauté the chopped onion and minced garlic until translucent.
  3. Add Spinach: Stir in the spinach and cook until wilted. Season with salt and pepper to taste.
  4. Mix the Filling: In a mixing bowl, combine the cream cheese, sour cream, lime juice, green chiles, cayenne pepper, chili powder, and cumin. Then, fold in the spinach mixture until well combined.
  5. Prepare the Baking Dish: Pour 1/2 cup of enchilada sauce into a baking dish, spreading it evenly across the bottom.
  6. Assemble the Enchiladas: Take each tortilla and spoon a portion of the filling down the center. Sprinkle a bit of cheese on top, then roll it tightly and place seam-side down in the baking dish.
  7. Top with Sauce and Cheese: Once all tortillas are in the dish, pour the remaining enchilada sauce over the top and sprinkle with the rest of the shredded cheese.
  8. Bake: Cover the dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and lightly browned.
  9. Garnish and Serve: Let the enchiladas cool slightly before garnishing with chopped cilantro.

Serving Suggestions:

  • Fresh Salad: A crisp salad with lettuce, tomatoes, and salsa verde adds a refreshing contrast.
  • Sour Cream or Guacamole: A dollop on top adds creaminess and indulgence.
