I dissolve gelatin in water according to the instructions on the package, then heat it, but do not allow it to boil.

Add gelatin to applesauce and beat until fluffy, about 10 minutes. The resulting consistency resembles whipped egg whites or cream.

I transfer the dessert into portioned molds, sprinkle with cinnamon and serve.
