1. Vanilla Butter Swirl Cookies
Ingredients:
⢠1 cup (225g) unsalted butter, softened
⢠ž cup (90g) icing sugar
⢠1 tsp vanilla extract
⢠2 cups (250g) all-purpose flour
⢠2 tbsp cornstarch
⢠A pinch of salt
Instructions:
Cream butter and icing sugar until light and fluffy. Add vanilla. Sift in flour, cornstarch, and salt; mix until smooth and pipeable. Transfer into a piping bag fitted with a star nozzle and pipe swirls on a baking tray lined with parchment. Bake at 170°C (340°F) for 12â15 minutes until lightly golden. Cool and store in airtight jars.
 2. Linzer Jam Cookies (Powdered Sugar Sandwich)
Ingredients:
⢠1 cup (225g) unsalted butter, softened
⢠ž cup (150g) sugar
⢠1 egg yolk
⢠2½ cups (310g) all-purpose flour
⢠½ cup (50g) almond flour (optional for nutty flavor)
⢠1 tsp vanilla extract
⢠Raspberry or strawberry jam
⢠Icing sugar for dusting
Instructions:
Cream butter and sugar, then add egg yolk and vanilla. Mix in flour and almond flour. Roll dough to Âź inch thick and cut out round shapes â half with small holes in the center. Bake at 170°C for 10â12 minutes. Once cool, spread jam on the plain cookies and sandwich with the ones with holes. Dust with icing sugar.
