Meringue Roll Recipe

Today, I’m excited to share with you a recipe that many have been eagerly awaiting – the meringue roll. This dessert miracle is incredibly tender, light, and prepared quickly, resulting in pure delight!

Let’s Get Cooking:

Prepare the Meringue:

Take 190g of egg whites (approximately 6 eggs), and add a pinch of citric acid and a quarter teaspoon of salt. Start beating at medium speed until soft foam forms.
Increase the mixer speed and gradually add 250g of sugar in several stages, beating for 15-20 seconds each time.
Continue beating until the meringue becomes glossy and stable.
After this, add 25g of cornstarch, carefully mixing it into the meringue, and beat briefly until smooth.

Bake the Meringue:

Line a baking sheet with parchment paper (preferably siliconized), spread the meringue evenly, and distribute it with a spatula.
Sprinkle almond flakes on top to add flavor.
Place the meringue in a preheated oven at 150 degrees Celsius and bake for 30 minutes.

Prepare the Filling:

Use seasonal berries, such as strawberries, and cut them for the filling.
When the meringue is ready and slightly browned, remove it from the oven, place another sheet of parchment paper and a wire rack on top, carefully flip it over, and remove the paper.
Let the meringue cool completely.

Prepare the Cream:

Mix 150g of curd cheese with 20g of powdered sugar.
Using a mixer, add 100ml of heavy cream and beat until thick.
