Flatbreads with Pickled Mushroom Filling
Ingredients:
For the Filling:
- 2 medium potatoes, peeled and cubed
- 1 onion, finely chopped
- 1 carrot, grated
- 2-3 pickled cucumbers (gherkins), grated
- Salt and pepper to taste
- Vegetable oil for frying
For the Dough:
- 250ml kefir (or buttermilk)
- 1/2 tsp baking soda
- 2 tbsp vegetable oil
- 1 egg
- 1/2 tsp salt
- 350-400g all-purpose flour, plus extra for dusting
