Hands down, our favorite dinner to eat during the fall!

Let’s admit it, friends – life gets busy. Whether it’s work, family, or personal passions, sometimes you just don’t have hours to spend in the kitchen. That’s where this Harvest Sheet Pan Dinner comes in, using chicken apple sausage slices to create a hearty, healthy meal with minimal effort. It all started when I found myself with a bunch of leftover fall veggies and some chicken apple sausages, and voila! A new go-to weeknight dinner was born. The best part? It all roasts on one pan, making clean-up a breeze!

This dinner is packed with protein, veggies, and those warm, comforting flavors of fall. But if you’re looking for a little something extra, it pairs wonderfully with crusty bread, a light salad, or served over a bed of quinoa or brown rice. And don’t forget – a glass of your favorite cider or chilled white wine wouldn’t hurt either!

Ingredients:

  • 4 chicken apple sausage links, sliced into rounds
  • 2 medium sweet potatoes, peeled and cubed
  • 1 large red onion, sliced
  • 2 cups Brussels sprouts, halved
  • 2 apples, cored and sliced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
