Flatbreads with Pickled Mushroom Filling

Ingredients:

For the Filling:

  • 2 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 2-3 pickled cucumbers (gherkins), grated
  • Salt and pepper to taste
  • Vegetable oil for frying

For the Dough:

  • 250ml kefir (or buttermilk)
  • 1/2 tsp baking soda
  • 2 tbsp vegetable oil
  • 1 egg
  • 1/2 tsp salt
  • 350-400g all-purpose flour, plus extra for dusting

For Cooking:

  • Butter for greasing
  • Extra vegetable oil for frying
